Crispy Parmesan Squash Chips

Ingredients
- 2 medium yellow squash, thinly sliced (about ⅛ inch thick)
- ½ cup freshly grated Parmesan cheese

Instructions

- 2 Using a mandoline or very sharp knife, slice the squash into very thin rounds, approximately ⅛ inch thick.
- 3 Place the squash slices in a single layer on paper towels and sprinkle with salt. Let sit for 10 minutes to draw out excess moisture.
- 4 Pat the squash slices dry with paper towels. In a large bowl, toss them with olive oil until evenly coated.
- 5 Arrange the slices in a single layer on the prepared baking sheets. Sprinkle with Parmesan cheese and black pepper if using.
- 6 Bake for 2 hours or until the chips are crispy and golden brown, rotating the baking sheets halfway through.
- 7 Let cool completely on the baking sheets. They will crisp up more as they cool.
